Ricky has a long history as a chef and sommelier, starting in Tuscany as a sommelier, having his own restaurant in Pietrasanta and since 2010 he has been working as a chef in Amsterdam. (Daalder, Guts & Glory, Bar Centraal, Otto Volante) In 2017 we started Winestories, our wine import and webshop where you can find a special collection of wines, directly imported from the winemaker. In 2020, we opened our restaurant OTTO VOLANTE but Covid hit hard and after 4 long years it was time to change things. So, what else can you do as a chef and wine importer? Right, cook, serve wine and enjoy life more. We want to share this with you.

Our philosophy is focused on natural, low intervention produce. We only use organic products, sustainable caught North sea fish, dairy cow and locally produced vegetables. We choose the best cheese and charcuterie and nothing here comes out of a jar, unless it’s our own ferments. Ricky can cook anything by your request. If we have to find a description of what he does.. we could think of it as itameshi, a fusion between the Italian and Japanese kitchen.

Our wines come from our own wine import WINESTORIES and are always made with low intervention, so no over manipulated wines filled with chemicals. With us you eat and drink clean, with the world in your mind.
